CHICKEN AND RICE BOWLS
A flavor-packed combination of veggies, chicken, rice and beans come together for the ultimate easy weeknight meal.
1.5 cups white rice
1 15oz can black beans, rinsed and drained
2 tablespoons Kaila Non-GMO Canola Oil
2 cloves garlic, minced
1 red onion, sliced
½ green cabbage, shredded
2 chicken breasts, cut into 1-inch cubes
sea salt and pepper, to taste
½ cup sour cream, for serving
½ cup salsa, for serving
chopped cilantro, for garnish
Prepare the rice according to package instructions. In a small pan, warm the beans over low heat. While the rice is cooking and the beans are warming, heat the Kaila Non-GMO Canola Oil in a large pan over medium heat. Add the garlic and cook for 1 minute until golden and fragrant. Add the red onion and cabbage and cook for an additional 2-3 minutes. Add the chicken, season with salt and pepper and cook for 10-12 minutes or until cooked through, stirring occasionally. Layer the bowls with rice, beans, and chicken and veggie mixture. Serve with sour cream, salsa and cilantro.
